- 255g plain flour
- pinch table salt
- 5 eggs
- 600ml milk
- vegetable oil
- Put the flour, salt and eggs into a bowl and mix together with a whisk until they form a tight batter. Now whisk in the milk until the batter is the consistency of double cream.
- Preheat the oven to 220°C/200°C fan/gas 7.
- Pour a little oil into each cup of a 10-hole Yorkshire pudding tray and place in the oven for the oil to get really hot.
- Fill the cups half full with batter and bake for 15 minutes or until crisp and golden. Now turn the Yorkies upside down in the tray and bake for a further 5 minutes so that they dry out. Serve straight away.
A great alternative to vegetable oil is duck or goose fat. Like the oil, the fat must be very hot when the batter is poured in. This recipe also works for that great classic, toad-in-the-hole.
